Cucumber and Corn Dip

Ingredients: 
  • 8 ounces light sour cream
  • 2-3 ears of corn, shucked and removed from the cob
  • 2 medium to large tomatoes, diced
  • 1 can of diced green chilies or 1/2 cup fresh green chilie
  • 1 cucumber, peeled, seeded and finely chopped
  • 1 teaspoon minced garlic
  • lime juice to taste
  • chopped cilantro to taste
Directions: 
  1. Mix ingredients together and chill.
  2. Serve with lime Tostitos.
