Cucumber and Corn Dip
Ingredients:
- 8 ounces light sour cream
- 2-3 ears of corn, shucked and removed from the cob
- 2 medium to large tomatoes, diced
- 1 can of diced green chilies or 1/2 cup fresh green chilie
- 1 cucumber, peeled, seeded and finely chopped
- 1 teaspoon minced garlic
- lime juice to taste
- chopped cilantro to taste
Directions:
- Mix ingredients together and chill.
- Serve with lime Tostitos.
