Mexican Style Pork Roast

Ingredients: 
  • Greenbrier Farms Boston Butt
  • 1 Onion, quartered
  • 1 Green Pepper, seeds removed and quartered
  • 1 can of Rotel - or when in season, 1 cup fresh, roughly chopped tomatoes and 1/2 cup chopped green chiles
  • 1/2 tsp dried oregano
  • 1 tsp cumin
  • 1 tbsp Worcestershire Sauce
  • Several dashes of Hot Sauce
  • 2 tbsp Red Wine Vinegar
  • 3 tsp salt - or to taste
  • 1 tsp black pepper
  • 3 cups Chicken Broth or you can use water - I just had some chicken broth on hand
Directions: 
  1. Place all ingredients in a crock pot and cook on low for 6 hours.
  2. Serve over your favorite Spanish-style Rice - last night I made brown rice with corn, carrots and a little Goya Sazon seasoning. Any rice works great!
