Mexican Style Pork Roast
Ingredients:
- Greenbrier Farms Boston Butt
- 1 Onion, quartered
- 1 Green Pepper, seeds removed and quartered
- 1 can of Rotel - or when in season, 1 cup fresh, roughly chopped tomatoes and 1/2 cup chopped green chiles
- 1/2 tsp dried oregano
- 1 tsp cumin
- 1 tbsp Worcestershire Sauce
- Several dashes of Hot Sauce
- 2 tbsp Red Wine Vinegar
- 3 tsp salt - or to taste
- 1 tsp black pepper
- 3 cups Chicken Broth or you can use water - I just had some chicken broth on hand
Directions:
- Place all ingredients in a crock pot and cook on low for 6 hours.
- Serve over your favorite Spanish-style Rice - last night I made brown rice with corn, carrots and a little Goya Sazon seasoning. Any rice works great!
